Recipe: Choc chip muesli cookies

I recently made this tea time treat at home and they were quite a hit, so I thought I would share the recipe. These chocolate chip cookies are a slightly healthier variation of the famous Nestle Tollhouse Choc-chip Cookies. I love chocolate chip cookies but I found the original recipe to be far too rich. I reduced some of the items like the amount of sugar and chocolate chips, and added a full cup of nutty muesli mixed with my favourite granola. They are definitely not slimmers’ cookies but the reduced sugar and fat, with the addition of the fibre rich muesli make them less of an indulgence.

Muesli choc chip ingredients

Ingredients:
2 1/4 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 cup butter, room temp
1 cup sugar
1 teaspoon vanilla essence
2 large eggs
1 cup chocolate chips
1 cup nutty muesli or granola
Optional: 2 heaped tablespoons of desiccated coconut

For an even healthier option, wholewheat or nut flours can be used, along with brown sugar, a light margarine and gluten free chocolate chips:

Method:
Preheat the oven to 180C. Mix the flour, baking powder and salt in a bowl. In a mixer, or by hand, cream the butter, sugar and vanilla essence. Add the eggs to the mix, one at a time, beating well after each addition. Gradually add the flour mixture to the creamed butter. Stir in the muesli and granola. Cover the dough with cling film and allow it to rest for at least 30 minutes in the fridge, if it is a very hot day. You can even leave the cookie dough in the fridge overnight, if you’d like to bake a fresh batch of cookies in the morning.

Scoop tablespoon sized portions of dough onto ungreased baking sheets. You can roll them into little balls to shape them neatly. Bake them for 10 to 12 minutes or until golden brown. About halfway through baking, I pressed them down with a fork. They looked much nicer this way, than they did when I pressed them down before putting them in the oven. Once they are golden brown, you should let them cool on the baking tray for 2 minutes, then remove to wire racks to cool completely.
